De smaak is mild en licht hartig van zichzelf, maar seitan neemt kruiden en marinades heel goed op. Daardoor kan het smaken als kip, rund of varkensvlees afhankelijk van de bereiding.
Het wordt gebruikt in roerbakgerechten, stoofschotels, sandwiches en grillgerechten. Het is populair omdat het een stevige, “vlezige” structuur heeft en veel eiwitten bevat, waardoor het een veelgebruikte vleesvervanger is in vegetarische en veganistische voeding.
